Two of the best classes I've taken since I started diving are Bob's Gas Management seminar and Janna's critter course.
These two classes are a strong part of every dive I do - it's funny, and kind of amazing, how knowing the critters and planning the dive just becomes "normal" even though it seemed so complicated when I first started diving.
Take both of these classes when you can. They're wonderful, though I must say Janna's is more entertaining. Bob hasn't figured out how to incorporate the "Buffalo Sculpin" song and dance (yes, it exists and you'll eventually learn it too) into his gas management class. Come to think about it, Bob doesn't give out toys or M&Ms either!
"FISH-O!! Now you can eat your M&Ms."
